Funfetti Cookies

I discovered this recipe on the side of a cake box from Pillsbury. It attributes the recipe to Molly Taylor, from Tennessee, who won their 1990 baking contest with this recipe.
Ingredients:
1 (18.9 oz) pkg. Pillsbury Funfetti Cake Mix
1/3 c. Oil
2 eggs
1 (15.6 oz) can Pillsbury Funfetti Frosting

Instructions:
Preheat oven to 375*F. Mix all ingredients together. Roll doll into 1-inch balls and place 2-inches apart on ungreased cookie sheets. Flatten the balls of dough to 1/4-inch thickness. Bake for 6-8 minutes. Cool 1 minute. Remove from cookie sheets. Frost cookies while warm and immediately sprinkle with candy bits from the frosting.

Yummy Potato Soup

I created this recipe mixing a few other recipes together.
Ingredients:
5 cups Chopped Potatoes (about 7 medium potatoes)
2 cans Cream of Chicken Soup
2 cups Milk
1 cup Buttermilk
2 cups Water
4 Chicken Bouillon Cubes
1/2 cup Cheddar Cheese (shredded or cubed)
8 oz. Sour Cream
3 thick Slices of Ham, chopped
2 Tb. Dehydrated Onions

Instructions:
Mix all ingredients together in a crock pot. Cook on low for 6 hours (or High for 3).

Finnish Pulla

A Yummy Finnish Dessert Bread. I found this recipe on allrecipes.com.

You will need the following ingredients:
2 cups milk
1/2 c. warm water (110*F)
1 pkg. active dry yeast
1 c. white sugar
1 tsp. salt
1 tsp. ground cardamom
4 eggs, beaten
9 cups all-purpose flour
1/2 c. butter, melted
1 egg, beaten
2 Tb. white sugar

Instructions:
1. Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm.
2. Dissolve the yeast in the warm water. Stir in the lukewarm milk, sugar, salt, cardamom, 4 eggs, and enough flour to make a batter (approximately 2 cups). Beat until the dough is smooth and elastic. Add about 3 cups of the flour and beat well; the dough should be smooth and glossy in appearance. Add the melted butter or margarine, and stir well. Beat again until the dough looks glossy. Stir in the remaining flour until the dough is stiff.
3. Turn out of bowl onto a floured surface, cover with an inverted mixing bowl, and let rest for 15 minutes. Knead the dough until smooth and satiny. Place in a lightly greased mixing bowl, and turn the dough to grease the top. Cover with a clean dishtowel. Let rise in a warm place until doubled in bulk, about 1 hour.

4. Punch down, and let rise again until almost doubled.
5. Turn out again on to a floured surface, and divide into 3 parts. Divide each third into 3 again. Roll each piece into a 12 to 16 inch strip. Braid 3 strips into a loaf. You should get 3 large braided loaves. Lift the braids onto a greased baking sheet. Let rise for 20 minutes.
 6. Brush each loaf with egg wash and sprinkle with sugar.

7/ Bake at 400*F for 25-30 minutes. Check occasionally because the bottom burns easily.
Especially yummy with jam!

Amazingly Easy Irish Soda Bread

Ingredients:
4 c. all-purpose flour
4 Tb. white sugar
1 tsp. baking soda
1 Tb. baking powder
1/2 tsp. salt
1/2 c. margarine, softened
1 c. buttermilk
1 egg
1/4 c. butter, melted
1/4 c. buttermilk

Instructions:
1. Preheat oven to 375*F. Lightly grease a large baking sheet.
2. In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 c. buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.
3. Bake in preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. You may continue to brush the loaf with the butter mixture while it bakes.

Karjalan Pies

This is a yummy Finish dinner I found on allrecipes.com. We made it for St. Urho's day, and we actually enjoyed it quite a bit!

You will need the following ingredients:
For filling:
2 cups water
1 cup uncooked white rice
2 cups milk
salt to taste

For dough:
1/2 cup water
1 teaspoon salt
1 cup rye flour
1/4 cup all-purpose flour, or as needed

For topping:
3 Tablespoons butter, melted


Instructions:
1. Combine rice and water in a saucepan over medium heat. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes, or until water is absorbed. Stir in milk, cover, and cook until milk is absorbed by the rice, about 20 minutes. Season with salt to taste.
2. Preheat the oven to 450*F. In a medium bowl, stir together the salt and rye flour. Stir in water. Mix in all-purpose flour 1 Tb. at a time until dough is just past the sticky stage. Divide the dough into 16 equal portions.
3. On a lightly floured surface, roll each piece of dough out into a thin circle 6 inches in diameter. The dough should be as thin as possible.

4. Place about 3 Tb. of the rice mixture in the center of each circle. Spread the mixture out to within 1 inch of the edges.
5. Fold the edges of the dough upward, and crimp the edges so as to allow the pastries to hold their shape. Pinch the sides at each end to form a little boat.
6. Place pastries about 3 inches apart on an ungreased baking sheet, and brush the tops with butter.
7. Bake for 10 to 15 minutes in the preheated oven, until the dough is firm, and the rice porridge is slightly browned on the top.
8. Serve warm. It's especially yummy with ham and cheese on top of it!

Graham Cracker Crust

Mix together 1 1/2 cups crushed Graham Cracker crumbs, 6 Tb. melted butter, and 1/3 c. sugar. Press mixture down firmly in a 9-in pie plate. Bake for 7 minutes at 375* or chill for one hour.

Easy Banana Cream Pie

Ingredients:
1 Graham Cracker Crust
1 pkg. Instant Vanilla Pudding Mix
1 pkgs. Instant Banana Cream Pudding Mix
2 3/4 c. Milk
1 carton Whipped Topping
2 medium bananas
1/3 c. crushed shortbread or Nilla wafer cookies

Instructions:
Mix puddings and milk together. Cut up one banana into small chunks. Mix with the pudding mixture and pour mixture into the Graham Cracker Crust. Cover with whipped topping, sliced bananas, and, finally, with crushed cookies. Refrigerate at least one hour, but three is preferable.

Pizza Roll-Ups

Ingredients:
Pizza Dough
Spaghetti Sauce (or Pizza Sauce)
Toppings of your choice
Cheese (cubed or shredded)
Parmesan Cheese

*The great thing about this recipe is that you can use as much or as little as you need/desire when making the food. Therefore, there are not exact quantities, rather guidelines for assembling the Pizza Roll-ups!*

Instructions:
1. Spread out the pizza dough to 1/4" thickness. Cut dough into long strips.
2. Spread sauce and topping on top of dough.

3. Roll up like a crescent roll. Sprinkle with Parmesan Cheese.
4. Bake at 400* for 15 minutes (careful to not burn the bottom!)

Tuna Noodle Casserole

This recipe is a combination of many suggestions/recipes I've come across.

You will need the following ingredients:
1 8 oz. pkg. Egg Noodles
2 cans Tuna (drained)
1 can Cream of Mushroom Soup
1/3 c. Milk
1/3 c. Sour Cream
1/2 c. Frozen Peas
1/2 c. Shredded Cheese
1/4 c. Parmesan Cheese
Salt and Pepper to taste

Instructions:
1. Boil the noodles in salted water until tender. Drain.
2. Mix together all the remaining ingredients EXCEPT the Parmesan Cheese.
3. Mix the noodles and the sauce together in a medium casserole dish.
4. Sprinkle Parmesan Cheese on top of casserole.
5. Bake at 350 degrees for 20 minutes.


**You can make this casserole with fewer noodles if you prefer it saucier. Or, you can add another can of soup.**
